Instructions:

For the vegetable pancakes, clean potatoes, carrots and kohlrabi and shave into coarse strips. Let stand for approx. 1/2 hour. Squeeze the mixture well. Beat eggs and add.

Mix in enough flour (about 3-4 tablespoons) to hold the mixture together. Season with salt and pepper. Heat a saucepan (it will not splash so much) with about 2 cm of oil.

Pour in portions with a spoon and press rather flat. Fry until crispy on both sides. Drain the vegetable pancakes on paper towels and serve with chive sauce.

Preparation Tip:
