Soak tamarind in water for three to four hours, crush the soaked tamarind with both hands, stir and stand for another hour. Pass the tamarind through a sieve and collect the water in a saucepan. Mix the chopped peppermint with the cumin and add to the tamarind water form, season with sugar, salt and chili spice, bring to the boil briefly, cool. Bring to the table ice cold.
