Instructions:

For the squid with tomatoes, wash the squid tubes, pat dry and cut into 1 cm thick rings. Mix with turmeric and salt and marinate in a sealed container for about 1 hour refrigerated.

Peel the onion and garlic and cut into small cubes. Wash the tomatoes and dice them as well. In a hot pan with ghee, fry the onions until translucent, add the garlic cubes and curry leaves and fry for 2 minutes.

Then add the squid rings to the pan and fry for 3 minutes. Then add the diced tomatoes, chili powder, coriander and lemon juice, season with salt and simmer on low heat for about 15 minutes until there is very little liquid left.

Now add the sugar and mix well. Serve the squid with tomatoes sprinkled with a little chopped parsley.

Preparation Tip:

Basmati rice or naan bread goes well with the squid with tomatoes.
