Instructions:

Peel the vegetables and onion, cut away the root and tip and cut into very small cubes. Divide the pumpkin flesh into slices half a centimeter thick, cut them into coarser cubes.

Melt the butter in a frying pan, sauté the onion and vegetable cubes with the pumpkin cubes for about 15 minutes with the lid closed until the pumpkin is almost soft. Season with salt, pepper and nutmeg.

Spread evenly in a buttered casserole dish, sprinkle with chopped parsley and strips of ham. Whip the cream until stiff, mix with the egg yolks, and spoon evenly over the vegetables. Place under the broiler and bake until golden brown.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
