Soak tamarind pulp and terasi in hot water.

In the meantime, peel the apples, remove the core and cut into pieces. Peel the mango, remove the core and cut the pulp into cubes. Peel the orange or grapefruit, cut into slices and remove the skin. Peel the pineapple. Remove the hard stem. Cut flesh into cubes. Peel cucumber, cut in half lengthwise and remove seeds. Cut the cucumber halves into narrow slices and then cut them into sticks. Place everything in a large enough bowl.

Stir tamarind pulp and terasi with the soaking waterr until it thickens and browns, spread through a sieve. Collect the juice and mix with sambal ölek, kecap manis and palm sugar.

Pour the sauce over the fruit salad and mix everything together well.
