Instructions:

Soak spelt in cold water for one night. A day later in the soaking water with vegetable soup make 90 min. Cook peeled carrots for 20 min. Drain. Cut carrots into very fine cubes. Mix spelt with carrot and onion cubes, chive rolls(1) , eggs, curd(1) and semolina. Season with salt and freshly ground pepper. Allow to swell for 10-15 minutes. Form 8 patties from the mixture and fry in hot butter for 3-4 minutes on each side.

Mix curd(2), yogurt, creme fraiche, vinegar essence, salt, pepper and parsley, honey, cress, dill and chives(2) to a sauce.

Our tip: Always use fresh chives if possible!
