For the Schwammerl-Gröstl boil potatoes until soft, let cool and then peel. Peel onion and cut into small cubes. Carefully clean mushrooms and cut into bite-sized, fine slices, bacon into fine strips. Rinse, dry and finely chop the chives and parsley.

Cut the potatoes into fine wheels. Fry the potatoes and bacon in a large frying pan in a little oil until golden brown. Sauté the onions in another pan in a little oil, add the mushrooms and brown them.
