For the sausage dumplings, boil the potatoes with the skin, strain and let cool slightly. Peel and strain the potatoes.
Mix with the remaining ingredients to form a dough and shape the dough into a roll.
For the sausage filling, finely chop the leftover sausage and mix with onion, egg, garlic and breadcrumbs.
Form small dumplings from the mixture. Cut slices from the potato roll, cover with a sausage dumpling and form dumplings.
Put the sausage dumplings into boiling salted water and cook for about 15 minutes. Take out the sausage dumplings and serve with sauerkraut.

If you make more sausage dumplings, you can freeze them.
