Strip the needles from the rosemary sprigs. Rinse the greengages, cut them in half and remove the seeds. Grate the zest from the lime very thinly, set aside. Thickly chop the lime peel and finely slice the flesh.

Mix the reindeer cloves, rosemary needles, lime zest and sugar and leave to infuse for about 5 hours. Add the lime slices together with the grape juice or white wine to the reneclodes and let everything bubble up. Let it boil for about 8 minutes, then fill it into jars on the spot.
