If necessary, gut the rabbit, cut it into pieces, rub with mild mustard, salt and pepper.

Brown the rabbit pieces in a pan with a little oil.

Place the pieces in a gratin dish and bake in the oven at 220 °C for 45 minutes. Put the whipped cream and the Roquefort in a saucepan and heat it up while stirring. After 45 min. spread the mixture over the rabbit and repeat this process a few times.

Tip. – If you like it with a lot of cheese, you can also use 200 g Roquefort. The cheese gives the rabbit the special touch.
