Instructions:

Cut rolls or milk bread into flakes.

Mix milk with eggs, egg yolks, sugar and a pinch of salt. Mix a little water with rum and soak the raisins in it.

Peel apples, cut into quarters and remove core. Finely slice or coarsely grate apples.

Grease an ovenproof baking dish with butter.

Mix apples with raisins, season with cinnamon.

Moisten the rolls well in the egg milk. Then alternate layers of bread and apple mixture in the baking dish and pour the remaining egg milk over them.

Press the pile well together. If the mixture is not juicy enough, add some milk and let it rest for at least 30 minutes.

Preheat the oven to 200 °C, bake the pile for about 40 minutes and let it cool down a bit.

In the meantime, beat egg whites with powdered sugar and a pinch of salt until stiff.

Spread on the pyre and decorate with a jagged pastry card if necessary (or pipe snow with a piping bag) and bake briefly in the oven until golden brown (best under the grill snake).

Preparation Tip:

Compote or applesauce and possibly cranberries go well with pyre.
