For the pumpkin soup, finely chop the onions and dice the pumpkin, sauté the onions in clarified butter, briefly roast the pumpkin.

Pour in half the milk and add half of the Amarettini, which are crumbled. After the soup has simmered for 15 minutes, puree with a hand blender.
