Make the washed potatoes as boiled, peeled potatoes, drain, rinse and peel. Cool a little, then cut slices about 3 mm thick. Dice the bacon not too finely. Fry it together with the lard in a large frying pan. Fry the drained chanterelles in it for 2 minutes and remove them repeatedly. Now add the potato slices to the frying pan and season with salt. Roast until crispy brown, turning frequently. Now season with pepper and caraway. Mix with the chanterelles and parsley and roast for another 1 minute. Sprinkle with chives and bring to the table in the frying pan.

Serve with fried eggs or cold roast and green salad in a vinegar-oil marinade.
