Crabburger:

Strain the liquid, mash the crab meat with a fork. Cut the shrimps into very fine slices (for a better processing method, see the “Shrimps” forum) and add to the shrimp meat form.

Mix the egg with the fish sauce and add to the crab meat. Season heartily with the spices, squeeze the garlic and add.

Finely dice the bread and stir in. Refrigerate until ready to serve.

Sauce:

For the sauce, mix crème fraîche and mayo. Add the juice of one lemon and the finely diced cucumber. Season with salt and pepper.

Shape:

Form 4 balls of the same size from the crab mixture, squeezing each one a little bit to make it drier. form hamburgers by means of flour.

Mix the egg yolks with the juice of one lemon. Brush one side of the hamburger with the egg and place in breadcrumbs. Coat the other side, flip hamburger to the other side.

Finish:

Cut hamburger buns in half and toast briefly. Place lettuce leaves on bottoms and coat with sauce, also coat inside of lids with sauce and top with onion rings.

Toast the shrimp burgers in enough olive oil until crispy, then place on the bun bottoms, cover and you’re done.

(Tip: Use bread crumbs or leftover boiled potatoes instead of the bread cubes).

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
