Put 2 tbsp. sugar with 2 tbsp. water in a saucepan and caramelize.

When the caramel begins to brown, dilute with an eighth of a liter of water and continue cooking until the consistency of a light syrup.

Cut the pears in half and remove the core. Pull pear halves in the hot, but no longer boiling caramel syrup.

Cut the vanilla bean in half lengthwise and squeeze out the pith. Grate about 1 tsp peel from each lemon and orange. Crush the peels of the citrus fruits with the vanilla pulp and pepper in a mortar and mix into the pears. Also add juice of one lemon and season.

Fry the ground almond kernels in a frying pan. Remove the pears and roll them in the roasted almond kernels.
