For the peach-ginger salsa, first peel and finely dice the peaches. Peel the ginger and grate finely. Chop the spring onion and the coriander.
Mix all ingredients well. Season to taste with 2-3 tablespoons of lime juice. Serve the peach-ginger salsa immediately!
Preparation Tip:
The peach-ginger salsa goes well with nachos, for example. If you don't like cilantro, you can use mint or parsley instead.
