Cream the butter, sugar and lemon zest. Add the flour and baking powder. Cut the passion fruit in half, scoop out the pulp with a teaspoon and pass through a sieve. Knead together with the remaining ingredients to form a dough. Leave to cool for 30 minutes. Roll out the dough and cut out about 60 circles of about 4 cm diameter. Bake on a baking tray at 175 degrees for about 10 minutes until golden brown.

Then cool.

Meanwhile, for the cream, mix the butter and powdered sugar until white. Gradually fold in the pulp of the passion fruit and add the rum. Then fill the cookies, i.e. coat one cookie with the cream and cover with a second one.
