Sauté shallots in olive oil until translucent, deglaze with white wine and Noilly Prat and let reduce almost completely. Then fill up with the fish stock and again reduce to 3/4 parts. Add chopped garlic and finely diced olives, stir in the olive oil and refine with fresh chives.
