(Tarte aux mirabelles, Lorraine) Ringlottes are the smallest type of plum and fresh fruit is only available in midsummer. However, the supply from France, Italy or possibly Germany is always small. The main cultivation area for ringlots is the northeast of France, but originally they come from Asia Minor. Ringroot contains a healthy mix of vitamins, minerals and secondary plant compounds. Because of their high potassium content, they have a dehydrating effect, and dietary fibers such as pectin stimulate digestion. Compote, fruit brandy or possibly a cake – the aromatic ringworm can be used in many ways, e.g. also as a casserole or possibly in a sauce with game dishes.

Prepare a short pastry from salt, flour, butter and water. Form the dough into a ball and rest in the refrigerator for an hour. Then roll it out, put it in a greased cake pan, prick it a few times with a fork and brush it with the beaten egg yolk (then the fruit will not soften it so quickly).

Place the stoned carrots on the bottom and bake the cake in a heated oven at 180 °C for about half an hour.

Boil sugar with water and flavor with mirabelle plum brandy.

Pour the syrup over the cake.
