Instructions:

For the mascarpone pancakes, whisk together eggs, milk, flour and salt and let rest for 30 minutes.

Mix curd cheese, mascarpone, vanilla sugar, powdered sugar, honey and salt. Heat a little coconut oil in a pan, pour in 1 ladleful of batter and swirl the pan to distribute the batter evenly.

Bake until golden brown, flip and finish baking. Do the same with the remaining batter. Spread the hot pancakes with the mascarpone filling, roll up, arrange on plates and sprinkle the mascarpone pancakes with sugar.

Preparation Tip:

Add nuts, fruit, chocolate sauce, etc. to the mascarpone pancakes or garnish as desired.
