For the lime basil syrup, wash the limes with hot water and rub dry. Finely grate 1 tablespoon of peel. Squeeze the juice from the fruit. Peel and finely grate the ginger root.

Put 300 ml of water in a saucepan and bring to a boil with the sugar, lime zest and juice, and ginger. Simmer gently for 6 minutes. Remove from heat and transfer to an earthenware jar. Only now coarsely chop the basil leaves and mix into the lime syrup. Cover and leave to infuse for 2 hours.

Then filter the syrup through a hair sieve and decant into carefully cleaned bottles. Drizzle a little alcohol over the top, light and seal immediately. Store the lime-basil syrup in a cool, dark place.
