Instructions:

For the lasagna, chop onions and garlic. Cut fresh tomatoes into cubes. Sauté onions and garlic in hot olive oil. Add the tomatoes in pieces.

Add sugar, tomato paste, herbs, sambal oelek and salt and simmer for 10 minutes. Add the tomato pieces and season to taste.

For the béchamel sauce, heat olive oil, toast flour briefly in it, pour in the soy milk and simmer for a few minutes while stirring. If the sauce becomes too thick, add a little water.

Stir in grated cheese and nutmeg and season with salt. Preheat oven to 175 °C top and bottom heat. Brush a baking dish with olive oil and alternate layers of lasagna sheets, tomato sauce and bechamel sauce.

Finally, sprinkle with the grated cheese. Bake lasagna for about 45 minutes, until cheese is crispy, golden brown.
