Try this delicious cake recipe:
Grate butter with salt, sugar, flour, egg yolks into a coarse crumbly shortcrust pastry. Do not work through too long. Pour crumbs into a buttered tart pan and press to form a base with a small rim. set aside to cool for half an hour. Preheat stove to level 4. Prick dough all around with a fork.
Mash the marzipan with the flour, egg yolks and butter with a fork, add the orange blossom water and mix until smooth, do not use the hand mixer, just use a fork. Spread frangipane (marzipan mixture) evenly over the base and spread until smooth.
Rinse gooseberries, cut off beards and stalks, rinse again if necessary, drain well. Spread evenly in a single layer on top of the marzipan. Sprinkle with 2 tbs sugar, drizzle with a tiny bit of orange liqueur.
Bake for approx. 45 min. on gas mark 4 (just to be sure, check what the edge is doing, should be nicely browned, the berries caramelized). Serve lukewarm or cooled with whipped cream.
Tip: The sticky frangipane is exceptionally easy to spread evenly by hand, level and smooth if you put a freezer bag over your hand and work with it, almost nothing sticks.
