To make the macadamia nut coated goat cheese, place the nuts in a freshness bag and place on a cutting board. Using a meat mallet, tap the fresh-keeping bag until the nuts are crushed. Place nuts in a soup plate along with the breadcrumbs and seasonings.
In a second soup plate, lightly beat the egg whites. Turn cheese slices, one at a time, in the egg white and then in the nut and crumb mixture. Lightly press the breading down with a fork.
Place cheese slices on a third plate and chill in refrigerator for 30 minutes.
Preheat oven to 200 degrees.
Bake cheese slices on a baking sheet lined with parchment paper for 5 minutes until golden brown. The cheese should soften during this process.
Arrange the goat cheese in macadamia nut coat on a bed of lettuce and serve with baguette.
