For the Focaccia Caprese knead a soft dough from flour, water, dry ferment and salt and let it rise for about 40 minutes.

Divide into 4 equal parts and press apart into patties. Place side by side on a baking sheet and let rise for 1 hour.

Press garlic and mix with olive oil. Press patties in several times with fingertips and brush with garlic oil.

Halve the tomatoes and cut the mozzarella into small cubes. Spread both evenly on the 4 dough patties and let rise for about half an hour.

Sprinkle with salt and pepper and bake in a preheated oven at 220 degrees for about 15 minutes until golden brown.

Before serving, drizzle the Focaccia Caprese with olive oil and sprinkle with chopped basil.
