For the curry carrots, peel the carrots and cut into rough cubes or sticks. Bring salted water to a boil in a pot and cook the carrot pieces in it until al dente (about 3 minutes). Lift out with a perforated ladle and drain in a large colander. Then layer in carefully cleaned jars.

Place the spices in a bowl and mix together. Now pour in the peanut oil and mix well. Now pour the spice oil over the carrots – the carrot pieces must be completely covered with the oil. Seal immediately and store the curry carrots in a cool, dry place.

Preparation Tip:

If you don't like it too spicy, you can reduce the amount of pepper in this recipe for curried carrots and add a pinch of ginger.
