Noodle dishes are just always delicious!

Heat oil in a wok or possibly in a frying pan. Tofu in narrow slices, then cut into strips and roast crispy brown. Fry the chicken cubes until they take on color. Remove and set aside. Break pasta into pieces. Fry in portions a few seconds each until they rise and turn crispy white. Remove and drain. Drain off all but about three tablespoons of the oil.

Stir-fry shrimp, green onions, and garlic for 1 1/2 minutes. Remove.

Pour egg mixture into frying pan. While it is sticking, break it up. Remove as soon as it is firm. Wipe out frying pan.

Pour lime juice, vinegar, sugar, water and fish sauce together into frying pan and bring to boil. Add chili seasoning and do 1-2 min. Add the fried noodles and turn to the other side in the sauce at high temperature extensively. Add chicken, shrimp, tofu, scallions, garlic and eggs. Stir everything through and heat together for 3 min.

Garnish with bean sprouts and chives.

!! Instead of forming both eggs in the frying pan, you can prepare a very thin omelet from one egg, roll it up and cut it into thin strips. Arrange the finished dish on the serving plate and decorate with the egg strips.
