To make the cloud bread, first preheat the oven to 150 °C. Cover a baking tray with baking paper.

Beat the egg whites together with the baking powder until stiff.

Mix the egg yolks with the cream cheese and salt. Carefully fold the beaten egg whites into the yolk mixture.

Place small patties on a baking sheet lined with baking paper and bake the cloud bread for about 30 minutes. The patties should be golden brown.

Peel the hard boiled eggs, mash them with a fork and mix them with mayonnaise, chopped herbs, mustard, salt and pepper. Season well.

Pluck the smoked char into bite-sized pieces and spread on the cloud breads with the herb egg spread.

Serve garnished with fresh herbs.

Preparation Tip:

Cloud breads are gluten free. You can also use a lactose-free cream cheese for this recipe to make the cloud breads lactose-free.
