For the bread dumplings, cut the bread into thin slices or possibly cubes and pour the boiling milk in a large baking bowl.

Finely dice the bacon and sauté in the hot butter. In the meantime, finely chop the onion as well and add to the bacon. Chop the parsley and add to the onions. Steam everything briefly until soft. Remove from the stove and cool.

Add the eggs to the soaked bread, season with salt and nutmeg and add the bacon and onion mixture. Mix everything well. The dough should become quite firm so that dumplings can be formed with wet hands. If the dough is too soft and the dumplings fall apart in the boiling water, add more breadcrumbs and mix well.

Place the formed dumplings in simmering water and let sit for about 15 to 20 minutes. Remove with a skimmer and bring the bread dumplings to the table.

The bread dumplings go very well with roast pork and sauerkraut.
