For the rhubarb sugar, boil water and sugar. Peel the rhubarb and cut diagonally into pieces of about two centimeters. Peel the lemon peel and squeeze a little juice. Soak gelatine in cold water, cut lemon balm leaves into thin strips. Mix honey with apple juice, juice of one lemon and lemon peel. Put rhubarb in clearing sugar, take out, cool down. Pour into coffee cups and refrigerate for about four hours.
