For the cream, pour the milk into a small pan. Slit the vanilla stem, scrape out the pulp and add to the milk with the stem. Add the sugar, egg yolks and cornflour. Stirring continuously, let it bubble up leisurely once for a short while. Remove the frying pan from the heat immediately and pour the cream into a suitable bowl so that it does not curdle on the hot bottom of the pan. Cool.

Peel the apples, cut them into quarters, remove the core and grate the fruit on the grater. Mix with the sugar. Cut the apricots into small cubes and add to the apples form.

Cut the pastry rondels into quarters and spread them with apricot jam. Spread the apple mixture evenly on the upper third of the dough triangles and roll and shape them into peaks.

Place on a baking sheet lined with parchment paper.
