Instructions:

For the almond rings, prepare the short pastry as described in the basic recipe.

Preheat the oven to 170° C hot air.

Roll out the dough on a floured work surface. Cut out round cookies. Poke a large hole in half of the discs.

Place the cookies on a baking sheet lined with parchment paper. Brush the perforated discs with egg yolk-milk mixture and sprinkle with the almond flakes. Bake for about 12 minutes.

Using jam, glue one perforated cookie to one unperforated cookie.
