Grate the potatoes with a rösti grater into a large enough bowl. Add pepper, salt, flour and nutmeg and mix. Add two thirds of the bacon cubes and spread evenly on a greased baking tray.
Spread the rest of the bacon cubes and butter, in small pieces, evenly over the top.
Bake: about forty minutes on the middle shelf of the oven heated to 200 °C, until the surface is golden brown.
Prepare: Plain in Pigna tastes best freshly prepared. The amount of work required is small.
