For the ginger milk, cut the washed ginger into very small cubes and squeeze the juice into a glass or mug using a garlic press. Heat the milk and pour over the ginger juice.
The milk will thicken or flocculate a little. Sweeten with honey, sprinkle with cinnamon, stir and enjoy the ginger milk warm.
Preparation Tip:
The leftover ginger can still be scalded with hot water and drink with lemon juice and honey.
