For the gingerbread heart, knead all ingredients (except the yolk) into a dough. Roll out the dough to a thickness of 1 cm and form a heart or press it into a heart springform pan.
Brush with yolk and bake at 220 °C hot air for about 5-7 minutes. Decorate the gingerbread heart as desired.

You can also cover the gingerbread heart entirely with chocolate and then decorate it.
