Cordon Bleu with a difference: prepared with fish fillets instead of meat.
Season fish fillets, spread heavy cream cheese on one side and sprinkle with shredded carrots.
Place two fillets at a time (with the coated side against each other) on top of each other and turn to the other side in the flaked almonds.
In a non-stick frying pan, roast them leisurely in the clarified butter on both sides. Arrange fried fish fillets on steamed fennel.
